व-याचे तांदूळ - दाण्याची आमटी

वरईचे तांदूळ म्हणजेच भगर उपवासाच्या दिवशी सहज आणि पटकन बनवण्यात येणारा पदार्थ. तसं दह्यासोबत भगर खायला चविष्ट लागते पण कधी  कधी  अस वाटते न कि काहीतरी गरम गरम सोबत असल तर उत्तम तर त्याच साठी आज भगर आणि उपवासाची आमटी कशी करायची याची रेसिपी शेयर करत आहे.

साहित्य:

भगर/ वरइचा भात 
१ कप वरईचे तांदूळ म्हणजेच भगर
साजूक तूप
जिरे
शेंदे मीठ - चवीनुसार
हिरव्या मिरच्या - सोयीनुसार चिरलेल्या २ -३
दही - अर्धा कप
शेंगदाणे कुत - कमीत कमी 2 टेबल स्पून अथवा आवडीनुसार
कोथिंबीर चिरलेली
कढीपत्ता - उपवासाला चालत असेल तर ८-१० पान
ब-याच ठिकाणी टमाटे, गाजर उपवासाला चालतात - ज्यांना चालतात त्यांनी बारीक चिरलेले टमाटे १-२, १ गाजर मोठ्या खिसणीने खिसून घेतले तरी चालेल.

आमटी:
शेकून टरफल काढलेले १ कप शेंगदाणे
१ मोठा बटाटा उकडलेला - चिरलेला
जिरे
शेंदे मीठ - चवीनुसार
लाल तिखट - चवीनुसार
साजूक तूप
हिरवी मिरची सोयीनुसार चिरलेली - ३-४
आलं - थोडं वाटलेले
आंबट ताक किंवा चिंचेचा कोळ
गुळ
टमाटे - उपवासाला तुमच्या कडे चालत असतील तर १-२ बारीक चिरून

कढीपत्ता - उपवासाला तुमच्या कडे चालत असतील तर ५-६ 

कृती 

भगर/ वरइचा भात 

१ कप वरईचे तांदूळ म्हणजेच भगर व्यवस्थित धुवून घ्यावी.

एका कढाईत किंवा कुकरच्या pan मध्ये साजूक तूप कमीत कमी १ टी स्पून टाकून गरम करून घ्या. 

मग जिरे टाकून तडतडू द्या. 

त्यानंतर चिरलेली हिरवी मिरची आणि कढीपत्ता टाका. 

जर टमाटे आणि गाजर चालत असतीन तर चिरलेले टमाटे आणि खिसलेली गाजर टाकून एकदा परतून घ्या.

आता १ कप वरईचे तांदूळ म्हणजेच भगर त्याचात टाकून थोडी परतून घ्या.

जवळपास दीड ते दोन कप पाणी टाकून शेंदे मीठ, दाण्याचे कुट, दही टाकून शिजवून घ्या. 

हि झाली तुमची भगर तयार. 

आमटी:
शेकून टरफल काढलेले १ कप शेंगदाणे मिक्सर मधून बारीक वाटून घ्या.
कढाईत साजूक तूप गरम करून जिरे टाका व तडतडू द्या.

हिरवी मिरची, कढीपत्ता, आलं टाकून परतून घ्या.

बारीक चिरून ठेवलेले टमाटे (उपवासाला तुमच्या कडे चालत असतील तर) टाकून पारून घ्या.

बारीक बाटलेले शेंगदाणे टाका आणि थोडं परतून घ्या.

उकडून चिरलेला बटाटा,  शेंदे मीठ, लाल तिखट, आंबट ताक किंवा चिंचेचा कोळ, गुळ आणि पाणी टाकून सगळं एकत्र करा आणि उकळू द्या.

गरम गरम वाढताना कोथिंबीर आणि साजूक तूप टाका.

साहित्य
२५० ग्राम (अंदाजे ४-५) बटाटे उकडून,
३ कप मटार दाणे
2 लहान टमाटे
१ कांदा
१ इंच आले वाटून
तिखट, मीठ - चवीनुसार
थोडे ब्रेडचे स्लाईस

तेलावर चिरलेला कांदा, वाटलेले आले, टमाटे, मटार घालून वाफवा. चिरलेले बटाटे व मीठ, तिखट त्यात घाला.
स्लाईसला बटर लावून त्यावर भाजी लावा.  दुसरा स्लाईस ठेवून sand-witch मेकर मध्ये ठेवून sand-witch बनवा.
किंवा तव्यावर ठेवून पोळपाटाने दाबून दोन्ही बाजूने शेकून घ्या.
पुदिना चटणी अथवा सॉस सोबत खायला द्या .

Life history of Shree Bharti Krishna Tirthaji Maharaj

साहित्य:
चांगले बटाटे - आर्धा किलो
तूप - आपल्या सवयीनुसार जास्तही चालेल पण कमीत कमी ४ टेबल स्पून
वेलदोडे पूड
केशर - ३-४ पाकळ्या छोट्या वाटीत पाण्यात भिजवून ठेवलेली किंवा केशरी खाण्याचा रंग
साखर - चवीनुसार जास्त हि चालेल पण कमीत कमी २०० ग्राम
काजू - तुकडे करून ठेवलेले
बदाम - तुकडे करून ठेवलेले
किशमिश
अन्य सुका मेवा आपल्या सोयीनुसार

कृती:
बटाटे चांगले धुवून घ्या आणि चिरून दोन तुकडे करून  चेक करून घ्या चांगले आहेत कि सडलेले . सडलेले फेकून द्या .
सर्व चांगले बटाटे कुकर मध्ये उकडून घ्या . बटाटे चांगले थंड होवू द्या . त्यानंतर साल काढून बटाटे पुरण यंत्रातून काढून घ्या .
कढाई मध्ये तूप घ्या आणि बटाट्याचा लगदा बदामी रंगाचा होईपर्यंत परतून घ्या . मधून मधून ग्यास कमी जास्त करत रहा म्हणजे बटाटा कढाईला चीटकणार नाही .
आता या लगद्यात साखर, वेलदोडे पूड घालून परत एकदा साखर व्यवास्थित मिळेपर्यंत हलवत रहा .
जर तुम्ही ख्याण्याचा रंग वापरणार असाल तर तो रंग हि एक थेंब (लिक्विड कलर) किंवा एक चिमुट भर (powder कलर) पाण्यात मिसळून टाकून द्या .
साखर मिसळली कि ग्यास बंद करा .
जर तुम्ही रंग येण्यासाठी केशर वापरणार असाल तर गरम गरम शि-यामध्ये पाण्यात भिजवलेली केशर टाका आणि एकदा चांगल मिसळून घ्या .
काजू, बदाम, किशमिश व अन्य सुका मेवा वाढताना सजवून द्या .

टीप : १) पुरण यंत्र नसेल तर पावभाजी masher ने बटाट्याचा लगदा तयार करा . masher ऐवजी तुम्ही जाड किसणी देखील वापरू शकता .
२) केशर पाण्यात भिजवून ठेवल्यास चांगला रंग येतो . पण बिलकुल कमीत कमी पाण्यात केशर भिजवावी .

रव्याचा हलवा

साहित्य:
१ कप बारीक रवा
अर्धा कप तुप
दीड कप साखर
2 कप पाणी
अर्धा कप दुध
चिमुट केशर (ऐच्छिक)
वेलदोडे पूड अर्धा चमचा
१ टेबल स्पून बेदाणे
२ बदाम

कृती
तूप चांगले गरम करा. त्यात बदामाचे काप परतून काढून ठेवा. मग रवा घालून खमंग भाजा. दुस-या ग्यासवर पाणी, साखर व बेदाणे उकळा. साखर (पाक करायचा नाही) रवा व हे पाणी एकत्र करा. दुध व केशराचा हबका मारा. तळलेले बदाम काप घाला. हा हलवा शुभप्रसंगी बनवतात. साध्या पु-याबरोबर वाढतात. हा आपल्या शि-यापेक्षा मऊसर असतो.

अन्दाजा उस दिन का भी कर लो जब हम नजर नहीं आयेगे..

बाकी सब नजरअंदाज हो गये!
