Dry-fruit chikki

Jay Annapurna Maa! You are welcomed on this blog for Vegetarian recipes. Here is a recipe of chikki. Please try it.



To make 24 pieces

Ingredients

1. 3 ½ cup castor sugar or you can use normal sugar by grinding it in same quantity

2.  2 tbsp pure ghee

3.  a few drops of lime juice

4.  powdered seeds of green cardamom

5.  ½ tsp nutmeg (jaifal) powder

6.   ¾ cup shredded almonds and cashew nuts

7.   9 tbsp shredded pistachio

8. 1 ½ tbsp musk melon, cucumber and pumpkin seeds, 

9. 2 tbsp poppy seeds

9. cellophone paper for wrapping chikki.

Method

1. Combine sugar ghee and lime juice in a dry pan. Place pan on gentle heat and stir till ghee and sugar melts. Continue cooking in low heat without stirring till light brown.

2. Add remaining ingredients and mix well.

3. Place the quarter of a mixture on a greased flat surface or a metal tray 6 by 4 inches in size and roll out into a rectangle, a quarter inch thick using a greased rolling pin. Unmold immediately to get a complete slab. Repeat it with remaining mixture.

4. Cut each slab into 2 inch square. Cool and wrap in cellophone paper. Store in an airtight container. 

It is high energy munching snack with goodness of dry-fruits.

Crunchy Munchy Masala Cashew

Ingredients

For frying cashew nuts

1. ¾ tbsp butter,

2. 1 cup cashew nuts,

Spices for kaju

1. ¼ tsp salt,

2.  1 tsp red chilli powder,

3.  1 pinch black pepper powder,

4. ¼ tsp cumin seeds powder.

5. 1 pinch of garam masala.

6. 1 pinch of cardamom powder.

Method

1. Add all masala ingredients in a bowl and keep ready.

2. Heat butter in a pan, fry cashews till light brown.

3. Drain and remove on paper.

4. Mix masala and fried cashews very well.

5. Store or serve, store in an airtight box.

Apple Gujiya

Ingredients

2 cup Maida, melted ghee for frying, cold water and a pinch of salt, Mawa - 250gm crumbled, Apple - 1 cup peeled and finely grated, finely grated cashew nuts and almonds - atleast 4 tbsp (you can add pistachio and brain nuts also alongwith few saffron strands), ½ tsp cinnamon (dalchini) powder, ½ tsp cardamom (ilayachi) powder, 1 tbsp milk.

Method

For the outer pastry or shell

1. In a large bowl sieve the flour and salt together. Add 1 tbsp of melted ghee. Rub the ghee in flour with your fingertips till the mixture reassembles like coarse. Add cold water gradually and knead dough into a smooth dough. Cover and keep aside for 30 minutes.

2. Now prepare for the gujiya feeling 

Add finely grated apple, crumbled mawa, dry-fruits, cardamom powder, cinnamon powder in a bowl and mash them all to mix well. As apple is sweet there is no need to add sugar in it.

3. Now heat this mixture till you get the melted mawa. It will not take more than 5 minutes so keep on stirring the mixture continuously. Keep this mixture aside till it cools.

4. After cooling of the mixture let's prepare the gujiya. Make medium sized balls of the dough. Roll into a round puri, nor thick or thin. Put and few tbsps of the apple khoya filling on the one side. Apply milk on the outer edges. Cover and press the edges together. Cut out the extra dough from the edges with a knife.

5. Pleat the gujias neatly from top to end. Make all the gujiyas this way and keep them on a thali or plate. Cover them.

6. Heat ghee for deep frying when hot fry 1 gujiya at a time till golden brown. 

(Note: Instead of ghee you can use oil but then there will be change is the aroma of the gujiya and it's taste.)

Saffron malai kulfi

Ingredients

Saffron strands, 1 tbsp warm water, 1 tbsp corn flour, ½ litre full fat milk, 5 tbsp sugar, ¼ tsp cardamom powder.

Method

1. Combine saffron and the warm water in a small bowl, mix well and keep aside. Saffron will become soft and the water will have the saffron colour which can be mixed very well to get proper saffron flavour in kulfi.

2. In a small bowl add corn flour and some water and mix well.

3. Heat the milk in a deep non stick pan and boil on a slow flame for 10 minutes, while stirring occasionally.

3. Add the corn flour water mixture and sugar, mix well and cook on a slow flame for 15 minutes, while stirring occasionally and stirring the sides.

4. Switch off the flame and allow the mixture to cool completely. Once cooled add the saffron water and cardamom powder and mix well. Keep it in kulfi moulds and put it in refrigerator for freezing.

5. After freezing take some kulfi sticks and put them in the center of the frozen kulfi and pull out. Serve immediately. 

Note: If you are not having kulfi moulds then don't worry you can freeze the kulfi mixture in a box and serve it in a bowl just like ice-cream. But in that case you have hand grind the mixture after 2 hours of freezing and then let it set to freeze.

Cucumber raita

To make 6 potions

Ingredients

2 medium sized fresh young cucumbers , 500 grams natural yogurt, salt as per taste (Himalayan rock salt is healthy option), 1 tsp freshly ground black pepper, ½ cup chopped fresh mint, finely chopped coriander leaves for garnishing, red chilly flax.

For tadka 1 tsp oil, cumin seeds, mustard seeds, pinch of asafoetida, curry leaves, one finely chopped green chilly.

Method

1. Peel the skin of the cucumbers and grate them.

2. For tadka in a tadka pan pour 1 tsp oil, on heating cracle mustard seeds and cumin seeds. Add a pinch of asafoetida. Then add curry leaves and finely chopped green chilly. Let it cool down to room temperature.

2. Mix with the yogurt and add the salt, pepper, red chilly flax and mint. Add tadka. Then Garnish with coriander leaves.

Fancy Salad Bar

The completer recipe is to make 6 take ups

Ingredients

For peas

½ cup shelled peas, 1 tbsp butter, Salt and black pepper powder as per taste.

For potato

2 potatoes boiled and sliced, salt as per taste, ¼ tsp white pepper powder, 1 tsp lemon juice

For tomato

1 tomato chopped in fine pieces, 1 tbsp olive oil, 1 tsp vinegar, ½ tsp powdered sugar

For cucumber

1 cucumber finely sliced slant, 1 tsp vinegar, 1 tsp olive oil, salt as per taste.

For onion

1 onion sliced in circles, 1 tbsp lemon juice, salt as per taste, 

For beetroot

1 beetroot boiled with a pinch of salt and sliced in circles.

For cheese

2 cheese cubes

For capsicum

1 capsicum, 1 tsp lemon juice

For carrot

½ carrot, 1 pinch white pepper, ½ tsp butter 1 pinch salt

For cabbage

1 leafy cabbage, 1 tsp lemon juice, salt as per taste, 1 pinch sugar, 

For radish

2 radish finely grated

For lettuce

½ head shredded lettuce leaves

Method

1. Shelled peas, sauté it in butter, salt and pepper and set aside, till coated with them. Set in the serving boul.

2. For potato, sprinkle all the ingredients on the chopped potatoes and mix them well. Set in the serving boul.

3. For tomato, cut into slices and dip in oil, add vinegar and sugar. Set in the serving boul.

4. Dip all slant slices of cucumber in olive oil and vinegar, sprinkle salt for taste. Set in the serving boul.

5. Dip all the onion slices in lemon juice and sprinkle the salt for taste. Set in the serving boul.

6. Add all the beetroot slices in the serving boul.

7. For capsicum, core and cut into rings and dip into the lemon juice. Set in the serving boul.

8. For carrot, cut slant, boil and sauté in butter, sprinkle salt and pepper. Set in the serving boul.

9. For cheese, slice and cut the edges in zigzag manner and Set in the serving boul.

10. For preparing cabbage, shred it finely and dip in lemon juice, salt and sugar. Set in the serving boul.

11. Add salt, lemon juice and powder sugar with grated radish and Set in the serving boul.

12. Sprinkle salt and sugar on the lettuce. Set in the serving boul.

13. Arrange all the bouls on table.

Roasted squash with crunchy flax granola

Roasted squash with crunchy pumpkin topping

 





Ingredients

½ cup pumpkin seeds and flax granola, 

¼ cup fresh toast crumbs, 

¼ cup melted coconut oil, 

¾ teaspoon pumpkin pie spice, 

Salt, black pepper as per taste,

1 large peeled, seeded and cut into medium cubes butternut squash, 

2 tbsp brown sugar (mix of sugar and jaggery)

1 tablespoon fresh thyme (dried oregano flowers)

Method

In a pan add 2tbsp of coconut oil and put pumpkin flax granola and roast it on medium flame. When there is golden brown colour flax granola, then slow down the flame and add the bread crumbs, ¼ tsp pumpkin pie spice, salt and black pepper and mix it well for a minute and put the flame off. This is granola mixture ready. Keep it aside to cool down.

In other pan put all the remaining coconut oil and toss together squash brown sugar, thyme and remaining pumpkin pie spice, salt and black pepper in it. Start roasting all these things until a butternut squash piece becomes lightly brown and fork tendered

Arrange the roasted butternut squash on platter and top with granola mixture.

So your new snack is ready for munching. This is low in cholesterol and high in potassium, carbohydrates, dietary fibres, vitamin A etc. So keep on preparing this snack for your munching.

Muttnik: American nickname for the dog Laika, the first animal launched on the space successfully. She was launched aboard Sputnik 2 in 1957. However, she died within few hours because of overheating. She paved the way for human being spaceflight that living being can enter into the orbit.

विनम्र बुनकर

जय श्री राम। आपके लिए एक विनम्र बुनकर की कहानी लायी हूँ। कृपया इस कहानी को अपने परिवार और मित्रों के साथ अवश्य पूरा पढ़ें। 


यह कहानी प्रकासम नगर की है जहाँ कई वर्ष पूर्व एक बुनकर रहता था। उसका नाम शाश्वत था और वह बड़ेही विनम्र स्वभाव का था। 

एक दिन शाश्वत बुनकर के दुकान के सामने से अयान नामक लड़का जा रहा था। अयान थोड़ा बदमाश किस्म का था। अयान ने शाश्वत को परेशान करने की सोची। फिर अयान ने सोचा, "क्यों न एक साड़ी का दाम पूछ लूँ और फिर उस साड़ी की टुकड़े करके और दाम पुछु। "

अयान शाश्वत की दुकान में आया और एक साड़ी ली और उसका दाम पूछा। 

शाश्वत ने कहा, "२००  रूपए। "

अयान ने उस साड़ी को दो  टुकडो में काट दिया और फिर उसका दाम पूछा। 

शाश्वत ने कहा, "१०० रूपए। "

ऐसा अयान ने बहुत बार किया लेकिन तब भी शाश्वत धैर्यपूर्वक जवाब देता रहा। 

ऐसा करते करते एक स्थिति ऐसी आयी की अयान आगे उस साड़ी के टुकड़े न कर सका। तब अयान के समझ आया की अब ये साड़ी उसके काम न आएगी। 

तब शाश्वत ने कहा, "अब तो ये तुम्हारे क्या किसी के भी काम में नहीं सकती।"

तब अयान उस साडी का दाम देने लगा। लेकिन शाश्वत बुनकर ने कहा, "साड़ी का दाम देने से साड़ी की भरपाई नहीं होंगी।"

अयान ने पूछा, "तो फिर साड़ी की भरपाई कैसे होगी?"

शाश्वत ने कहा, "साड़ी की भरपाई तो तब होंगी जब मेरी पत्नी कपास की रुई बनाकर उससे सूत निकालकर मुझे उसे रंगने देंगी। फिर मेरी पत्नी उस रंगीन सूत को बुना जायेगा तब एक साड़ी बनेंगी और फिर एक साड़ी की भरपाई होंगी। साड़ी तो दूसरी जाएंगी लेकिन आपने की हुई गलती नहीं सुधरेंगी और गया हुआ समय वापिस नहीं आएगा

सार यह है की समाज को आगे बढ़ने के लिए अपनी गन्दी आदतों को छोड़ना पड़ेगा।

परोपकार

जय श्री राम! आज आपके लिए परोपकार की पराकाष्टा की कहानी लेकर आयी हुं। कृपया कहानी को पूरा पढ़िए। 


घटना गाँव तोरुर की है। वहा एक धनी साहूकार रहता था जिसका नाम नारायण था। 

नारायण ने एक हाथी को पाल रखा था। एक दिन वह हाथी उन्मत हो उठा। उसने अपने मालिक नारायण को उठा के पटक दिया। नारायण ने उसको शांत करने की बहुत कोशिश की लेकिन वह शांत नहीं हुआ। और इस बार हाथी ने उसे पटका और उसकी पीठ में अपने नुकीले दाँत घुसा दिये जिसके कारण वह बेहोश हो गए। 

इतनी हलचल होने के कारण आस पास के लोग भी वहा पहुचे और उन्होंने उस हाथी को शांत कर दिया। फिर सब लोगो ने नारायण को वैद्यशाला ले गए ताकि नारायण का सहीसे उपचार हो सके। 

नारायण की जांच करने के बाद वैद्यजी बोले, "नारायण के पीठ का घाव बहुत गहरा है। उसे सिर्फ टाकेँ देकर नहीं भरा जा सकता। इसके लिए हमें एक इंसान का डेढ़ पौन मांस लगेंगा।"  

नारायण के परिचित, घरवाले कोई भी इस काम के लिए तैयार नहीं थे। लेकिन जब यह बात एक वैद्य, जो की बहुत अच्छे संस्कारों वाला था, उसे पता चली तो वह इस काम के लिए खुद होकर सामने आया। 

फिर नारायण को टाके लगे और उसके घाव का इलाज हुआ। तब कहा जा के उसकी जान बची। 

असल में मनुष्यता का दूसरा नाम ही परोपकार है। अगर हम अपने तन, मन, धन में से थोडासा देश को ठीक करने में लगाए तो, तो हमारे लिए अच्छा होता है।
