Sprouted mat bean and Tomato

 

Jay Annpurna Maa! Hello my friends! Here is one healthy recipe for you. Please go through the procedure and prepare it.

For 6 servings

Ingredients:

250 grams moth beans duly sprouted

2 tbsp double filtered eatable oil 

Mustard seeds and cumin seeds for Tadka

2 small onions finely chopped

4 medium tomatoes, finely chopped

2 tsp finely grated ginger - use grater of smallest holes

4 garlic [lasun] cloves, crush it to a fine paste

1 ½ tsp green chilies - cut as smaller as you can. 

½ cup coconut milk - if not available then sock 3tsp coconut in ½ cup milk for half and hour and grind it finely.

¼ tsp turmeric powder

Salt of your taste

2 tbsp coriander leaves finely chopped

Method

Heat oil in a saucer pan. 

Then add mustard and cumin seeds to crackle. 

Add onions, stir and fry till light brown in colour. Add ginger garlic and green chillies stir and fry for 2 minutes. 

Add moth beans, stir and cook for few minutes. Add coconut milk, turmeric powder, salt (as per your taste) tomatoes and mix well. 

Cook for 5 minutes till moth beans tender.

Remove in a serving bowl, garnish with chopped coriander leaves and serve hot with rice or chapatti.

Health aspects:

This dish is low in cholesterol, low in carbohydrates and high in proteins. 

Note: For Jain recipe atleast do not use onion, ginger and garlic.
